First, anything with a wet batter is a no-go. The batter will drip and create a soggy mess instead of a crispy coating. Think tempura or beer-battered fish. Next, large whole chickens or roasts might not cook evenly, leading to undercooked centers and burnt outsides. Stick to smaller pieces.
